Healthy Peanut Butter Snack Bars – No Oven Needed!

Looking for a healthier sweet snack you can whip up in minutes? These no-bake peanut butter bars are packed with protein, super satisfying, and perfect for busy days. I make a batch almost weekly—they’re a hit with the kids, and they store beautifully in the fridge for whenever the snack craving hits.


Bars

2 cups of peanut butter (use your favorite, but if you’re going for the most healthy use an organic peanut butter)

2 1/4 almond flour

1/4 coconut oil

1/4 cup maple syrup

Melt coconut oil and PB together until smooth. You can do this in the microwave or a double boiler (bowl over hot water). Remove from the heat and add almond flour and maple syrup.

Topping

To make the topping, melt 1/4-1/2 cup chocolate chips and two tablespoons coconut oil in a microwave or double boiler (see note above). I use dark chocolate chips since they have less sugar.

Press the peanut butter mixture into an 8 x 8” square pan lined with parchment paper. Pour melted chocolate over the tops and smooth out. Chill in the refrigerator until set.


Finish with a sprinkle of sea salt or some chopped peanuts or jimmies if you want to make it fun. I keep these in an airtight container in the fridge. It’s a great healthier option for a sweet treat!
